Having bought frozen patties for the best part of our years as vegan we thought it was about time we made our own! For some reason we always thought it would be daunting, or that they would take too long. However, we were pleasantly surprised! So, if you find these patties a-peeling keep reading to see how we made them!

Ingredients:
one sweet potato
one tomato
one red pepper
one onion
kidney beans
a sprinkle of corn flour
one chilli
salt
pepper paprika
cumin powder
one tbsp miso paste

Method:
- Boil the sweet potato in salted water for 10 minutes, or until cooked. In the meantime, chop up the rest of the veg into small pieces.
- Mash the potato in a large bowl and chuck in the rest of the veg. Add the corn flour, seasoning and miso paste and mix well.
- Lightly fry, flipping occasionally to ensure that both sides are cooked well. This can take up to 10 minutes to fully cook. Tip: use a large pan to fry, allowing a number of patties to cook at the same time.
